We started our search by reviewing recent surveys that rated 250+ French Chocolate makers. We then contacted the top 20 makers as rated in the surveys (top 7%). We had each maker send us samples of their particular specialties and performed taste tests on each of these. We selected the top makers based upon our taste tests. We continue to review the specialties of top makers and will periodically expand and improve our selection.
